Beet Chips

Ingredients:

2 medium beets
1 teaspoon extra-virgin olive oil

Directions:

Preheat oven to 350 degrees, with racks in upper and lower thirds. Peel beets and slice 1/16 inch thick with a mandoline. In a large bowl, toss beets with extra-virgin olive oil.

NEWS FROM THE FARM
Ok, so this is the last week of Peppers!  (I promise.) We’ve had a bumper crop of peppers this season and as is typical in CSA, you’ve received the bounty of the harvest over the past couple months.  Luckily peppers are easy to roast and freeze for use in recipes over the winter!  Check out the instructions under the Recipe section in this newsletter.The Cauliflower is a real treat this week!  This crop is not especially easy to grow and we haven’t had it for several seasons, so enjoy!

Wondering what to do with all the peppers?  Try Roasting & Storing them!
Parmesan-Roasted Cauliflower
Roasted Beet Salad with Orange & Beet Greens
Chickpea Stew with Swiss Chard

Cauliflower and potato soup
In a heavy bottomed soup pot, saute a chopped onion and 1 clove of minced garlic in some olive oil.  Add a head of cauliflower (roughly cut into 1″ chunks), 2-3 small potatoes and 1 carrot (all peeled and cut into 1/2″ chunks) and saute for a few minutes.  Add water to just cover the veg, put a top on the pot and boil, then simmer until the potatoes, carrots and cauliflower are tender.  Use an immersion blender to puree smooth and season to taste with salt and pepper.

NOTES FROM GOLDEN EARTHWORM
Happy October! What a beautiful start to the official fall season with warm temperatures and sunny days! Our crops are all growing well and we’ve even had to start irrigating again with no rain in the near forecast.

I’m finalizing plans for our Harvest Fest on October 20th and I’ll share some exciting details with you next week. Until then, enjoy this week’s bountiful harvest! –Maggie

STORAGE TIPS
In a bag in the fridge: Salad Turnips, Swiss Chard, Lettuce, Arugula, Kale, Peppers
On the counter: Tomatoes
FRUIT: Ripen pears on the counter. Bosc pears are ripe when they are fully brown (no green).  Small black spots on the pears are superficial and will not affect the taste or quality of the fruit. You can wash or cut it off.

NOTES ON THE GOLDEN EARTHWORM VEGGIE SHARE
This is our final week of CSA for the 2012 season. If you want to make this week’s share last you into the holiday season, you’re in luck! They can all be stored well under the correct conditions. The Beets, Cabbage and Carrots can be stored in the fridge in a plastic bag for about a month. The Potatoes can be stored in a cool, dark place (not in the fridge) and the Sweet Potatoes should be kept in a cool (not cold) dark place.

NEWS FROM GOLDEN EARTHWORM FARM
We’ve come to the end of another growing season here on the East End of Long Island. Overall, it was good season for us. The warm, dry summer was just what our crops needed, and we lost very little to disease (like in past rainy years). We want to thank you for your membership this season and we hope you will join us again in 2013. We will be sending out a notice as soon as our renewal application is available on our website in the next few weeks.

Tonight: Donate Food for Hurricane Relief
Donate any/all of your CSA share that can be eaten raw AND bring other ready-to-eat foods to pick-up. We are partnering with Sunnyside Cares to coordinate a food drop-off in the Rockaways. Here are some ideas of what to bring: Orange Juice, Apple Juice, granola bars, powdered milk, jelly, jars of baby food, formula (see Sunnyside Cares on Facebook for more info on how to help). NOTE: NO GLASS, NOTHING THAT NEEDS A CAN OPENER.

Also Tonight: Sign up for Winter Shares
Tonight, from 5-8pm, is the ONLY in-person sign up for winter shares. If you plan to sign up in-person, please know the details of the shares you are purchasing and *bring your checkbook.* Remember, the easiest way to sign up is right here via web form and pay with PayPal. You can also sign up via web form then pay by sending a check to our P.O. box.
Note: Payment must be received by November 15th.
